The excellence of coffee shops in Lima
The second edition of the Cafeteria Contest of Lima - Experience, organized by the Peruvian Chamber of Coffee and Cocoa and Le Cordon Bleu, will give results on May 31.
The increase in coffee shops in Lima is part of a global phenomenon: changes in lifestyle motivate more consumers to be interested in new flavors and experiences, such as coffee consumption and, in particular, the consumption of coffee outside the country. home, part of this process.
It is estimated that in Lima there are more than 180 specialty coffee shops, we find in this segment national chains in expansion; but the vast majority are ventures of coffee enthusiasts. This phenomenon, previously concentrated in districts such as Miraflores, San Isidro or Barranco, is now diversified. In Ventanilla, San Juan de Miraflores or San Juan de Lurigancho we find specialty coffee shops. With a price between 5 and 15 soles according to the preparation method. The enjoyment of a cup of coffee outside the home is expanding.
Towards Excellence
Enjoying good coffee is a combination of at least 4 factors: the quality of the coffee bean, the work of the barista or who prepares the drink, the environment in which the drink is made and consumed, and the quality of the service.
As important as having a clean cup (without fermenting or other defects), it is that the drink is in the measure and that the temperature is correct, or that the space where we are evokes the pleasure of coffee, besides complying with the protocol of Attention. This guarantees a good experience and that is what the contest evaluates.
Coffee can also be consumed in a restaurant, bakery or pastry shop, cafeteria at work or university, or other spaces where coffee is a complement or final companion of a meal. It is estimated that these spaces concentrate 75% of coffee consumption outside the home.
The contest classifies coffee shops in three categories. Specialty: when they have a barista and have a method of preparation. Complement: when the coffee is consumed with a dessert, sandwich, etc. Restaurant: when the coffee is consumed at the end of the meal.
The results of 2018 were encouraging, but they also showed aspects to improve. Out of 100 possible points, the average results by category were: Specialty 70, Complement 63 and Restaurant 55.
Last year the contest awarded to 9 coffee shops, showing that there are very good spaces for the enjoyment of the drink, as well as an interesting offer of quality coffee. However, there are gaps in coffee preparation and improvements in care. This 2019, the second edition of the contest will have a new prize: a roasting course in Brazil.
The award will be made within the framework of the 22nd National Coffee and Cocoa Convention, an event organized by the Peruvian Chamber of Coffee and Cocoa and which will expose aspects of internal consumption, production, sustainability, among others. The event will be held on May 30 and 31 at the José Antonio de Deluxe hotel in Miraflores.
